Cow & Cookie is a joint venture between the Penn State Bakery and the Berkey Creamery, serving “Quakes” that combine creamery ice cream with delicious baked goods. Previously operating their business out of a small, mobile stand located in the Hub-Robeson Center on campus, Cow & Cookie was looking to expand its operations into its very own storefront within the building, and they needed HLA to help guide them through the planning and design process. We worked under strict deadlines to not only deliver the finished space, but to help Cow & Cookie build and perfect their unique in-store concept from the project’s very inception. Where we landed involves the ability for students to either order their Quakes conventionally in store, or they can order through an app and pickup on site via self-serve locker. The convenience store spotlights all the best of Penn State baked goods and echoes the aesthetic of a French bistro, thoughtfully integrating marketing displays with merchandise, while the kitchen focuses on lighting and layout efficiency compatible with the high-volume orders.
